Poppy Seed Chicken

1 - 12.5 oz. can Sweet Sue Chicken Breast
1 can Cream of Mushroom Soup
1 - 8 oz. Sour Cream
2 teaspoons Poppy Seeds
1 Stick Butter
 40 Ritz Crackers

Drain chicken and put in greased casserole dish.  Mix soup and sour cream.  Spread over chicken.   Melt butter and add crushed crackers.  Sprinkle over soup and sour cream mixture.  Sprinkle poppy seeds on top.  Bake at 375 degrees about 30 minutes.  

First time I saw this recipe was from Becky Hodges, Winston County Clerk, MFC. 
Becky died from cancer in January 2008.
